Smoked Salmon Brunch Bagel

This smoked salmon bagel can be enjoyed for breakfast, brunch or lunch and also works great in work or school lunchboxes too! Don't like smoked salmon? No worries. Swap it out for another protein source.⁠

Smoked Salmon Brunch Bagel

  • 2 wholegrain bagels

  • 2 hardboiled eggs, peeled and sliced

  • ½ ripe avocado, mashed

  • 2 tbsp feta of choice

  • ½ cup baby spinach leaves

  • 100g smoked salmon, sliced

  • salt and pepper, to season

01 Halve bagels and toast in the toaster.

02 Spread insides of bagel with avocado and feta. Layer with spinach leaves, smoked salmon and sliced egg. Season and place tops on bagels. Serve.
