This antipasto combination is an absolute delight and such a refreshing change from good old ham or chicken rolls.

Antipasto Baguettes

  • 2 baguettes

  • 2 tbsp whole egg mayonnaise

  • 4 lettuce leaves

  • 1 tomato, thinly sliced

  • 80g prosciutto or mild salami

  • handful sliced black olives

  • 4 slices cheddar cheese

  • handful rocket

01 Cut baguettes in half lengthways (do not cut all the way through).

02 Open baguettes to sit flat. Spread one side with mayonnaise. Top with lettuce, tomato, prosciutto or salami, olives, cheddar and rocket. Cover with baguette top. Serve.
