Green Goodness Sandwich

Keeping sandwiches interesting can always be a challenge! This cheesy, avocado egg spread is such a wholesome substitute for your basic spreads and is so quick and simple to make.

Green Goodness Sandwich

Stage 1:

  • 2 hardboiled eggs, peeled

  • 1 small avocado, de-skinned

  • ¼ cup feta, crumbled

  • salt + pepper, to season

Stage 2:

  • 1 cup alfalfa sprouts

  • 4 cos lettuce leaves

  • 4 pieces multigrain bread

01 Place stage 1 ingredients into a shallow bowl and mash with a fork until combined.

02 Divide the egg spread between 2 slices of bread. Top with alfalfa and lettuce leaves. Place remaining slices on top of sandwiches. Serve.

Tip:

Use the lettuce leaves as a buffer between the spread and the bread to avoid the bread going soggy.

To make this recipe gluten free, opt for gluten free bread.
