Save time in the mornings by batch cooking this nourishing granola. Made in just 20 minutes, it makes for a quick and easy go-to each morning. Enjoy it topped with milk, fruit and a dollop of Greek yoghurt.⁠

Prep: 5 min | Cook: 15 min | Makes: 9 cups

Loaded Granola

Dry:

  • 2 cups rolled oats or quinoa flakes

  • 2 cup puffed rice

  • 2 cups puffed corn

  • 1 cup shredded coconut

  • ½ cup sunflower seeds

  • ½ cup pepitas

  • ½ cup currants

  • ½ cup chopped pecans (optional)

  • ½ cup slivered almonds

  • ¼ cup sesame seeds

  • 2 tbsp cinnamon

Wet:

  • ¼ cup maple syrup

01 Preheat oven to 160°C.

02 Combine all dry ingredients in a large bowl. Add maple syrup and mix until well coated.

03 Divide mixture across 2 lined baking trays. Spread out evenly. Bake for 7 minutes.

04 Remove and stir. Return to oven and bake for another 7 minutes. Allow to cool before transferring to a container.

Store: In an air tight container for up to 2 weeks.

Dietaries:

To make this recipe gluten free, opt for quinoa flakes. To make this recipe nut free, omit the nuts.
